The Austin Chase "fox" has a very "spicy" and "flavorful" history with its origins linked to the most unusual and expensive coffee grown in the world. The Austin Chase "fox" is actually a small marsupial (paradoxurus) that lives amongst the coffee trees in the Indonesian islands of Sumatra, Java, and Sulawesi. The world's rarest and most expensive coffee, Kopi Luwak, starts in these islands as a targeted entree for these Indonesian "foxes".

The coffee journey begins when the ripest, most red coffee cherries are selectively "harvested" by the little foxes. No one knows who first observed the next processing step, but the animals digest and eventually excrete (fairly intact and usually in a targeted area), the green coffee beans, still wrapped in layers of the cherries' protective parchment. It is thought that the enzymes within the foxes' stomachs add a unique flavor to the coffee during the fermentation process.

It is not clear who the first courageous person was to sample the special coffee. Some argue that the local populace, not wanting to risk their health and limbs by climbing the coffee trees, found it easier to collect beans on the ground that had already been "harvested". Others maintain that several hundred years ago, the native population wanted to play a joke on the first explorers to the islands and roasted and brewed the special blend for their guests. In any event, this coffee has become one of the rarest, if not the rarest beverage in the world. Supposedly, less than 500 pounds of this coffee are harvested each year and the majority of the beans are purchased in Japan. Selling for $300 per pound, this expensive brew is reserved for very special occasions.

It is not clear that a cup of Kopi Luwak will increase one's life span or influence the romantic side of people's lives. It is clear that the Austin Chase "fox" has a history that spans several centuries. With such limited availability and atmospheric prices, Kopi Luwak is more a beverage for coffee lore than coffee consumption.
